Older recipe books are a feast of glacé cherries, spices and candied mixed peel, everything that makes a Christmas cake the most celebrated cake of the year. People share recipes for dark fruitcakes drenched in brandy, light ones that sparkle with golden sultanas, pineapple and apricots, Dundee cake with marmalade, and luxury fruit loaves that can be eaten on the same day. There are even chocolate fruitcakes, midnight dark with all the dates, molasses, cocoa and coffee. With such luxurious ingredients you shouldn’t take a chance, but rather rely on a classic recipe like this one that’s been handed down from generation to generation.</span><span class=\"s2\"> </span></p>\r\n<p class=\"p1\"><span class=\"s2\"><b>Fruitcake </b></span></p>\r\n<p class=\"p1\"><span class=\"s2\"><b>(Christmas cake)</b></span><span class=\"s2\"><i> </i></span></p>\r\n<p class=\"p1\"><span class=\"s2\"><i>Makes 1 x 28cm single-layer cake.</i></span></p>\r\n<p class=\"p1\"><span class=\"s2\"><i>Note: Soak the fruit the night before.</i></span></p>\r\n<p class=\"p1\"><span class=\"s2\"><b>Ingredients</b></span><span class=\"s2\"> </span></p>\r\n\r\n<ul>\r\n \t<li class=\"p1\"><span class=\"s2\">450g currants</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">250g seedless or seeded raisins</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">250g sultanas</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">250g dates, finely chopped</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">6 pieces preserved ginger in syrup, finely chopped</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">120g glacé cherries, halved</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">120g candied mixed peel</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">120ml brandy</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">370g butter or margarine</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">200g sugar</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">5 eggs</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">5ml bicarb</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">5ml coffee powder or granules</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">380g cake flour</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">7.5ml baking powder</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">2.5ml ground mixed spice</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">2.5ml grated nutmeg</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">2.5ml ground cinnamon</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">1ml salt</span></li>\r\n \t<li class=\"p1\"><span class=\"s2\">125ml walnuts, roughly chopped</span></li>\r\n</ul>\r\n<p class=\"p1\"><span class=\"s2\"><b>Method</b></span><span class=\"s2\"> </span></p>\r\n<p class=\"p1\"><span class=\"s2\">Place all the dried fruit, preserved ginger, cherries and candied mixed peel in a bowl and pour over half the brandy. Cover the bowl with clingwrap and leave to stand overnight.</span></p>\r\n<p class=\"p1\"><span class=\"s2\">Preheat the oven to 150°C. Line a large cake pan (28cm in diameter and 11cm high) with baking paper and grease with butter (see tip).</span><span class=\"s2\"> </span></p>\r\n<p class=\"p1\"><span class=\"s2\">Beat the butter or margarine and sugar together until light and creamy. Add the eggs one at a time, beating well after each addition. Dissolve the bicarb and coffee in a little water and add to the egg mixture.</span></p>\r\n<p class=\"p1\"><span class=\"s2\">Sift together the flour, baking powder, mixed spice, nutmeg, cinnamon and salt. Add the soaked fruit to the flour mixture and stir well to cover all the fruit. Then add this to the egg mixture together with the nuts. Mix well.</span></p>\r\n<p class=\"p1\"><span class=\"s2\">Pour the batter into the prepared cake pan and bake for</span></p>\r\n<p class=\"p1\"><span class=\"s2\">3-3½ hours until a test skewer inserted in the centre comes out clean. Pour the remaining brandy over and let the cake cool in the pan. Once cool, remove it from the pan and wrap it in clingwrap and then aluminium foil.</span></p>\r\n<p class=\"p1\"><span class=\"s2\"><b>Tip</b></span></p>\r\n<p class=\"p1\"><span class=\"s2\">To prevent the cake from baking too dark on the outside: Take two sheets of newspaper and fold in three. Wrap the folded paper around the cake pan and secure with string. Fold another two sheets of newspaper in three and place under the pan. Pour into 2-litre cooldrink bottles and place 6 raisins in each bottle.
