"contents": " \r\n\r\n<i><span style=\"font-weight: 400;\">Send your Lockdown Recipes to [email protected] with a hi-resolution horizontal (landscape) photo.</span></i>\r\n\r\n<b>Ingredients</b>\r\n\r\n<span style=\"font-weight: 400;\">Beef fillet for two, four or six (most people want more than one slice)</span>\r\n\r\n<span style=\"font-weight: 400;\">1 roll of shop-bought puff pastry (defrosted)</span>\r\n\r\n<span style=\"font-weight: 400;\">Tins of </span><span style=\"font-weight: 400;\">pâté</span><span style=\"font-weight: 400;\"> (chicken liver, enough to cover the meat)</span>\r\n\r\n<span style=\"font-weight: 400;\">1 pack button or brown mushrooms, finely chopped and pan-fried in butter with chopped garlic and seasoned with salt and pepper, again enough to cover the meat (Note: it's important with mushrooms to cook all the liquid away.)</span>\r\n\r\n<b>Method</b>\r\n\r\n<span style=\"font-weight: 400;\">Seal the beef fillet (or lamb loin) well on all sides in butter in a hot pan, seasoning it with salt and pepper. Set aside.</span>\r\n\r\n<span style=\"font-weight: 400;\">Roll out the pastry.</span>\r\n\r\n<span style=\"font-weight: 400;\">When cool, place in the middle of the rolled out pastry and cover with the </span><span style=\"font-weight: 400;\">pâté</span><span style=\"font-weight: 400;\"> and then the mushrooms.</span>\r\n\r\n<span style=\"font-weight: 400;\">Wrap the pastry around it and seal the “package”, pinching it with your fingers at the join, and decorate with a pastry flower or other pastry detail of your choice.</span>\r\n\r\n<span style=\"font-weight: 400;\">Brush the pastry with melted butter.</span>\r\n\r\n<span style=\"font-weight: 400;\">Place in a roasting pan in a medium oven at 180℃ for about 30 minutes or until the pastry is golden brown.</span>\r\n\r\n<span style=\"font-weight: 400;\">Leave to rest for 15 minutes.</span>\r\n\r\n<span style=\"font-weight: 400;\">Slice with a sharp knife and serve with vegetables of your choice.</span>\r\n\r\n<b>TGIFood TIP</b>\r\n\r\n<span style=\"font-weight: 400;\">You can of course make your own </span><span style=\"font-weight: 400;\">pâté</span><span style=\"font-weight: 400;\"> to seal the meat in the pastry but tinned </span><span style=\"font-weight: 400;\">pâté</span><span style=\"font-weight: 400;\"> is delicious and a time saver.
