"contents": "<span style=\"font-weight: 400;\">It’s a perfect winter’s day to be out in the countryside. With hardly a cloud in the sky, the sun is glistening off the ancient rocks of the Hemel-en-Aarde Ridge, in the heart of the Cape Floral Kingdom — one of the world’s most biodiverse wine regions. </span>\r\n\r\n<span style=\"font-weight: 400;\">The aptly named Hemel-en-Aarde (Heaven and Earth) region is renowned for its cool climate and diverse, ancient soils, perfect for cultivating world-class pinot noir and chardonnay. We moved heaven and earth to get there, in a high-spec test-drive car, about which more later.</span>\r\n\r\n<span style=\"font-weight: 400;\">Near the top of the ridge is Creation Winery. Founded in 2002 by Swiss winemaker JC Martin and his wife Carolyn, Creation was once a 40-hectare rocky site, untouched by vines. There’s a legacy of winemaking in their blood: Carolyn’s maiden name is Finlayson, a family of pioneers of pinot noir in South Africa, who once owned Hartenberg and have been associated with Blaauwklippen Wine Estate, Glen Carlou, Edgbaston, Boschendal and Bouchard Finlayson. </span>\r\n\r\n<span style=\"font-weight: 400;\">JC decided at the age of 14 to become a winemaker (inspired by his grandfather, Jules Martin, who established the family winery on the banks of Lake Bienne in Switzerland in 1935) and owns a large stake in the historic winery of Grillette in Neuchâtel. </span>\r\n\r\n<span style=\"font-weight: 400;\">In 2002, they embarked on the ambitious task of transforming this remote corner of the Walker Bay wine region into a world-class estate. </span>\r\n\r\n<span style=\"font-weight: 400;\">The name “Creation” reflects not only the farm’s exceptional terroir but also their innovative approach to viticulture, including their work in establishing virus-free vineyards.</span>\r\n\r\n<b>International acclaim</b>\r\n\r\n<span style=\"font-weight: 400;\">I’m embarrassed to say that our visit to Creation was long overdue: It was almost a year to the day since my chat with Carolyn, who is also their creative director, about the estate after that slice of heaven was nominated as the </span><a href=\"https://www.dailymaverick.co.za/article/2023-07-14-creation-wines-makes-top-five-ranking-on-prestigious-worlds-50-best-vineyards-to-visit/\"><span style=\"font-weight: 400;\">world’s fourth-best vineyard to visit</span></a><span style=\"font-weight: 400;\"> and the top wine estate in Africa. </span>\r\n\r\n<span style=\"font-weight: 400;\">Creation’s closest contenders were Catena Zapata Wines in Mendoza, Argentina (which won the world’s best vineyard); Bodegas de los Herederos del Marqués de Riscal in Rioja, Spain; Viña VIK in Chile; and Château Smith Haut Lafitte in Bordeaux, France, in fifth position, as the finest wine tourism destinations in the world.</span>\r\n\r\n<span style=\"font-weight: 400;\">This was the fifth edition of the awards, which are organised by William Reed Media, a digital data and events business in the food and beverage sector. Based in London, William Reed Media also releases the influential World’s 50 Best Restaurants awards list. The 50 World’s Best Vineyards will be held in the UK later in November.</span>\r\n\r\n<span style=\"font-weight: 400;\">Creation is no stranger to award shows, both locally and abroad: this year alone, it has won the Best in Wine Tourism Services and Art and Culture in South Africa; the </span><a href=\"https://www.restaurants.co.za/news/creation-wines-wins-the-2024-v-dor-award-for-best-brand-experience#:~:text=Over%20South%20Africa-,Creation%20Wines%20wins%20the%202024%20V%20d,Award%20for%20Best%20Brand%20Experience&text=In%20Paris%20on%20Sunday%2C%20February,award%20for%20Best%20Brand%20Experience.\"><span style=\"font-weight: 400;\">2024 V d’Or Award for Best Brand Experience</span></a><span style=\"font-weight: 400;\"> in Paris, based on the innovative and original quality of the brand experience, its personality, and consistent quality; and two of their wines were picked by the </span><a href=\"https://www.worldsbestsommeliersselection.com/the-selection.html\"><span style=\"font-weight: 400;\">World’s</span></a> <a href=\"https://www.worldsbestsommeliersselection.com/the-selection.html\"><span style=\"font-weight: 400;\">Best Sommeliers’ Selection</span></a><span style=\"font-weight: 400;\">: the 2021 Creation Glenn’s Chardonnay and the 2021 Creation Art of Pinot Noir (The WBSS is an exclusive competition showcasing wines with extraordinary character and compelling stories.)</span>\r\n\r\n<span style=\"font-weight: 400;\">Tasting room brand ambassador and sommelier Tinashe Musora is one of Creation’s rising superstars: in June, he won the </span><a href=\"https://www.creationwines.com/tinashe-wins-wineland-30-under-30-luminary-award/\"><span style=\"font-weight: 400;\">inaugural Luminary Award</span></a><span style=\"font-weight: 400;\"> at WineLand Media’s 30 Under 30 Awards, for his extraordinary contributions to the wine industry and his inspiring journey. </span>\r\n\r\n<span style=\"font-weight: 400;\">At the age of 24, Musora is the son of Martin’s domestic worker and has a bright future ahead of him. He started clearing tables at Creation Wines after high school and has quickly ascended the ranks, transitioning to a tasting room assistant and ultimately a skilled sommelier. </span>\r\n\r\n<span style=\"font-weight: 400;\">Everyone’s rooting for him.</span>\r\n\r\n<span style=\"font-weight: 400;\">Musora was the inaugural recipient of the Gérard Basset Foundation WSET Diploma in Wines Bursary, the first time it has been awarded for the </span><a href=\"https://www.wsetglobal.com/?utm_source=wine.co.za\"><span style=\"font-weight: 400;\">Wine and Spirit Education Trust</span></a><span style=\"font-weight: 400;\">’s flagship Level 4 Diploma in Wines. </span>\r\n\r\n<span style=\"font-weight: 400;\">In May, he earned a distinction in the Wine Judging Academy, affiliated with the University of Cape Town. </span>\r\n\r\n<b>Food and wine pairing with a difference</b>\r\n\r\n<span style=\"font-weight: 400;\">Creation offers an immersive experience beyond superb wine, combining an extraordinary dining experience that celebrates biodiversity through its menu and wine list, stunning landscapes, and beguiling art, including The Journey exhibition by a local glass-blowing studio, Red Hot Glass.</span>\r\n\r\n<span style=\"font-weight: 400;\">Executive chef Eleanor Coetzee and her team, who are all credited individually for their dishes, have consulted with Nicola Cunningham, a plant-based chef, Martin explains. The team doesn’t come from a traditionally plant-based background, so they’ve developed their skills in terms of creating food which is more plant-based. They also incorporate Ayurvedic principles into their menu. </span>\r\n\r\n<span style=\"font-weight: 400;\">Martin’s enthusiasm for Creation is on a par with Musora’s earnest passion for wine. We joined him for a guided food and wine pairing with a difference, connecting nature, innovation and the senses, at a table dressed with a piece of red velvet cloth, a silk scarf, a rock and a seashell — brought on during various courses to heighten and complement the tactile, visual, taste, sound, smell and vestibular input of the pairing.</span>\r\n\r\n<span style=\"font-weight: 400;\">Elaborating on the odd selection at the table, Martin explained that placing the seashell to the ear enhances the flavours of the chardonnay, while feeling the rock magnifies the minerality of the sauvignon blanc; the silky smoothness of the pinot; and the velvety rich texture of the syrah. It’s certainly plausible (and not merely the power of suggestion, as Heston Blumenthal — famous for his scientific approach to food — proved with dishes such as “Sound of the Sea” at The Fat Duck).</span>\r\n\r\n<span style=\"font-weight: 400;\">Creation’s Winter Journey (which ends in September) is a symphony for the senses. About 80% of the menu is plant-based, so there are vegetarian and vegan options alongside sustainably sourced fish, beef, game, and poultry.</span>\r\n\r\n<b>Each chapter of the journey a surprise</b>\r\n\r\n<p><img loading=\"lazy\" class=\"size-extra_large wp-image-2330235\" src=\"https://www.dailymaverick.co.za/wp-content/uploads/2024/08/crouthlast-1600x792.jpg\" alt=\"\" width=\"720\" height=\"356\" /> Springbok loin; umami broth and bone marrow; hazelnut and other sweet delights. (Photos: Supplied)</p>\r\n\r\n<span style=\"font-weight: 400;\">Each chapter of the journey is a surprise. The welcome soup is a simple bowl of watercress, parsnip and leek soup with cumin oil and a parsley bratzeli (a savoury Swiss wafer made with a special iron much like a waffle iron), served alongside warm fennel water with fresh fennel leaf and Creation sauvignon blanc. </span>\r\n\r\n<span style=\"font-weight: 400;\">“Chapter 1” kicks off with a Creation viognier, which is described as Vivaldi in a glass — brimming with joyous white and ripe yellow cling peaches. This textural symphony is paired with agedashi tofu, vegan dashi, and crispy ginger. A fine pairing, and a well-executed dish, although tofu, no matter how skilfully dolled up, has simply never rocked my world.</span>\r\n\r\n<span style=\"font-weight: 400;\">The next course is outstanding in both the freshness and clever flavour and textural combinations. Creation’s ABC Reserve Chardonnay (Absolutely Brilliant Chardonnay) takes centre stage with grilled trout and trout caviar with slivers of peppery radish, courgette and spring onion (or roasted fennel bulbs, leeks, radish, and wild garlic), followed by the velvety Creation Reserve Pinot Noir (“Prince Charming”) served with a stunning loin of springbok, with celeriac, king oyster mushrooms, pea pur</span><span style=\"font-weight: 400;\">é</span><span style=\"font-weight: 400;\">e, goat’s milk cheese, and chocolate jus. For vegans, there’s a plant-based alternative with cauliflower, king oyster mushrooms, and cashew cheese. </span>\r\n\r\n<span style=\"font-weight: 400;\">Creation’s Syrah Grenache is served with a warming “oh so umami” broth that is served either with bone marrow or shiitake mushrooms, and a slice of seed loaf. </span>\r\n\r\n<span style=\"font-weight: 400;\">Dessert is a joyful dance of chocolate mousse dusted with finely chopped hazelnut, coffee ice cream and slivers of orange, paired with Creation’s Fine Cape Vintage port-style wine. Not overly sugary (Martin’s menu is markedly lower in sugar than most) nor too rich, just hitting the right sweet spot so diners don’t feel as if they’ve gorged after a heavy meal. </span>\r\n\r\n<span style=\"font-weight: 400;\">Beyond the wines, Creation’s has a signature alcohol-free pairing menu, a Kids Menu with fun options like build-your-own waffles, and a breakfast menu (that can also be paired with wine).</span>\r\n\r\n<b>Gale-force winds and lashing rain</b>\r\n\r\n<span style=\"font-weight: 400;\">To reach Creation, we had taken a new test car, a stunning machine-grey Mazda CX5 2-litre, out for a spin in the sticks and for a city runaround, and this family SUV was taking whatever the Cape was flinging at it. Earlier in the day, we had met gale-force winds and lashing rain along the West Coast. By noon, on the other side of the mountain, there’s a slight breeze and no rain, but we’re braving some washboard roads while searching for Creation Wine Estate outside Hermanus. </span>\r\n\r\n<span style=\"font-weight: 400;\">Mazda’s CX5 boasts Skyactiv, a series of technologies that integrate control of the engine, transmission, chassis and body to enhance a “sense of oneness” between car and driver. The Japanese call this harmony between man and beast </span><i><span style=\"font-weight: 400;\">jinba ittai</span></i><span style=\"font-weight: 400;\">: It’s also the design philosophy of Mazda. Essentially, it makes for responsive driving in any situation, which is just as well because by the time we reach the estate, Waze had taken us on a wild trip along some rough roads that might have been the shortest route but certainly weren’t the smoothest. The CX5 handled it like a pro — almost gliding over the dirt track.</span>\r\n\r\n<span style=\"font-weight: 400;\">If you haven’t taken a trip to Hemel-en-Aarde recently, make a plan to visit soon. Sometimes, the real treasures are right under our noses, without big fanfare or showy marketing. At Creation, they just get on with it fabulously. We joined him for a guided food and wine pairing with a difference, connecting nature, innovation and the senses, at a table dressed with a piece of red velvet cloth, a silk scarf, a rock and a seashell — brought on during various courses to heighten and complement the tactile, visual, taste, sound, smell and vestibular input of the pairing.</span>\r\n\r\n<span style=\"font-weight: 400;\">Elaborating on the odd selection at the table, Martin explained that placing the seashell to the ear enhances the flavours of the chardonnay, while feeling the rock magnifies the minerality of the sauvignon blanc; the silky smoothness of the pinot; and the velvety rich texture of the syrah. It’s certainly plausible (and not merely the power of suggestion, as Heston Blumenthal — famous for his scientific approach to food — proved with dishes such as “Sound of the Sea” at The Fat Duck).</span>\r\n\r\n<span style=\"font-weight: 400;\">Creation’s Winter Journey (which ends in September) is a symphony for the senses. About 80% of the menu is plant-based, so there are vegetarian and vegan options alongside sustainably sourced fish, beef, game, and poultry.</span>\r\n\r\n<b>Each chapter of the journey a surprise</b>\r\n\r\n[caption id=\"attachment_2330235\" align=\"alignnone\" width=\"720\"]<img class=\"size-extra_large wp-image-2330235\" src=\"https://www.dailymaverick.co.za/wp-content/uploads/2024/08/crouthlast-1600x792.jpg\" alt=\"\" width=\"720\" height=\"356\" /> Springbok loin; umami broth and bone marrow; hazelnut and other sweet delights. The welcome soup is a simple bowl of watercress, parsnip and leek soup with cumin oil and a parsley bratzeli (a savoury Swiss wafer made with a special iron much like a waffle iron), served alongside warm fennel water with fresh fennel leaf and Creation sauvignon blanc. </span>\r\n\r\n<span style=\"font-weight: 400;\">“Chapter 1” kicks off with a Creation viognier, which is described as Vivaldi in a glass — brimming with joyous white and ripe yellow cling peaches. This textural symphony is paired with agedashi tofu, vegan dashi, and crispy ginger. A fine pairing, and a well-executed dish, although tofu, no matter how skilfully dolled up, has simply never rocked my world.</span>\r\n\r\n<span style=\"font-weight: 400;\">The next course is outstanding in both the freshness and clever flavour and textural combinations. Creation’s ABC Reserve Chardonnay (Absolutely Brilliant Chardonnay) takes centre stage with grilled trout and trout caviar with slivers of peppery radish, courgette and spring onion (or roasted fennel bulbs, leeks, radish, and wild garlic), followed by the velvety Creation Reserve Pinot Noir (“Prince Charming”) served with a stunning loin of springbok, with celeriac, king oyster mushrooms, pea pur</span><span style=\"font-weight: 400;\">é</span><span style=\"font-weight: 400;\">e, goat’s milk cheese, and chocolate jus. For vegans, there’s a plant-based alternative with cauliflower, king oyster mushrooms, and cashew cheese. </span>\r\n\r\n<span style=\"font-weight: 400;\">Creation’s Syrah Grenache is served with a warming “oh so umami” broth that is served either with bone marrow or shiitake mushrooms, and a slice of seed loaf. </span>\r\n\r\n<span style=\"font-weight: 400;\">Dessert is a joyful dance of chocolate mousse dusted with finely chopped hazelnut, coffee ice cream and slivers of orange, paired with Creation’s Fine Cape Vintage port-style wine. Not overly sugary (Martin’s menu is markedly lower in sugar than most) nor too rich, just hitting the right sweet spot so diners don’t feel as if they’ve gorged after a heavy meal. </span>\r\n\r\n<span style=\"font-weight: 400;\">Beyond the wines, Creation’s has a signature alcohol-free pairing menu, a Kids Menu with fun options like build-your-own waffles, and a breakfast menu (that can also be paired with wine).</span>\r\n\r\n<b>Gale-force winds and lashing rain</b>\r\n\r\n<span style=\"font-weight: 400;\">To reach Creation, we had taken a new test car, a stunning machine-grey Mazda CX5 2-litre, out for a spin in the sticks and for a city runaround, and this family SUV was taking whatever the Cape was flinging at it. Earlier in the day, we had met gale-force winds and lashing rain along the West Coast. By noon, on the other side of the mountain, there’s a slight breeze and no rain, but we’re braving some washboard roads while searching for Creation Wine Estate outside Hermanus. </span>\r\n\r\n<span style=\"font-weight: 400;\">Mazda’s CX5 boasts Skyactiv, a series of technologies that integrate control of the engine, transmission, chassis and body to enhance a “sense of oneness” between car and driver. The Japanese call this harmony between man and beast </span><i><span style=\"font-weight: 400;\">jinba ittai</span></i><span style=\"font-weight: 400;\">: It’s also the design philosophy of Mazda. Essentially, it makes for responsive driving in any situation, which is just as well because by the time we reach the estate, Waze had taken us on a wild trip along some rough roads that might have been the shortest route but certainly weren’t the smoothest. The CX5 handled it like a pro — almost gliding over the dirt track.</span>\r\n\r\n<span style=\"font-weight: 400;\">If you haven’t taken a trip to Hemel-en-Aarde recently, make a plan to visit soon. Sometimes, the real treasures are right under our noses, without big fanfare or showy marketing. At Creation, they just get on with it fabulously.
