So I thought of her when I received this letter from Mama Bolo. I also gave Mama Bolo Candy’s delicious cheesecake recipe.</span>\r\n\r\n<span style=\"font-weight: 400;\"><b>Tannie Kuruman’s Melktert</b></span>\r\n\r\n<span style=\"font-weight: 400;\">Serves 8–10</span>\r\n\r\n<b>Crust</b>\r\n\r\n<span style=\"font-weight: 400;\">1¼ cups cake flour</span>\r\n\r\n<span style=\"font-weight: 400;\">⅓ cup icing sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">¼ tsp salt</span>\r\n\r\n<span style=\"font-weight: 400;\">½ cup (125g) cubed butter, softened</span>\r\n\r\n<span style=\"font-weight: 400;\">2 egg yolks</span>\r\n\r\n<b>Filling</b>\r\n\r\n<i><span style=\"font-weight: 400;\">Ingredients A</span></i>\r\n\r\n<span style=\"font-weight: 400;\">2 cups milk</span>\r\n\r\n<span style=\"font-weight: 400;\">1 Tbsp butter</span>\r\n\r\n<span style=\"font-weight: 400;\">a pinch of salt</span>\r\n\r\n<span style=\"font-weight: 400;\">⅔ cup sugar</span>\r\n\r\n<i><span style=\"font-weight: 400;\">Ingredients B</span></i>\r\n\r\n<span style=\"font-weight: 400;\">1 cup milk</span>\r\n\r\n<span style=\"font-weight: 400;\">2 Tbsp cake flour</span>\r\n\r\n<span style=\"font-weight: 400;\">¼ cup cornflour</span>\r\n\r\n<i><span style=\"font-weight: 400;\">Ingredients C</span></i>\r\n\r\n<span style=\"font-weight: 400;\">2 eggs</span>\r\n\r\n<span style=\"font-weight: 400;\">1 t vanilla extract</span>\r\n\r\n<b>Topping</b>\r\n\r\n<span style=\"font-weight: 400;\">cinnamon sugar for dusting</span>\r\n<ol>\r\n \t<li>Preheat your oven to 200ºC and grease a 24cm pie dish with butter.</li>\r\n \t<li>First make the crust. Sift the flour, icing sugar and salt together.</li>\r\n \t<li>Add the butter and egg yolks and cut into the flour with a knife. Using your fingers, knead very gently until the butter is mixed in. Wrap the dough in clingfilm and leave to rest for 30 minutes in the fridge.</li>\r\n \t<li>Roll out the dough on a floured surface and line the well-greased pie dish with it.</li>\r\n \t<li>Prick the base with a fork and bake for 15–20 minutes.</li>\r\n \t<li>Heat ingredients A in a saucepan, stirring until the sugar has dissolved.</li>\r\n \t<li>Mix ingredients B in a bowl, and pour A onto B. Mix well and return to the saucepan.</li>\r\n \t<li>Cook the mixture, stirring all the time, for about 5 minutes until it has thickened and the floury taste has gone.</li>\r\n \t<li>Beat ingredients C in a bowl. Slowly whisk the hot mixture into C and mix well. Return to the saucepan and cook gently until thick (2–3 minutes).</li>\r\n \t<li>Pour the custard into the baked pastry crust and let it cool and set. Sprinkle on lots of cinnamon sugar before serving.</li>\r\n \t<li>Notes</li>\r\n \t<li></li>\r\n</ol>\r\n<ul>\r\n \t<li aria-level=\"1\"><span style=\"font-weight: 400;\">To make cinnamon sugar, mix equal parts of ground cinnamon and brown sugar.</span></li>\r\n \t<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">You can dust the top of the milk tart with cinnamon only instead of cinnamon sugar.</span></li>\r\n</ul>\r\n<b>Candy’s Cheesecake</b>\r\n\r\n<p><img loading=\"lazy\" class=\"size-extra_large wp-image-2690350\" src=\"https://www.dailymaverick.co.za/wp-content/uploads/2025/04/Candys-Cheesecake.-Ed-ORiley.-jpg-1600x1292.jpg\" alt=\"\" width=\"720\" height=\"581\" /> Candy’s delicious cheesecake. We met when her cousin Martine was murdered. Ag, shame.</span>\r\n\r\n<span style=\"font-weight: 400;\">serves 10–12</span>\r\n\r\n<b>Crust</b>\r\n\r\n<span style=\"font-weight: 400;\">200g Brazil nuts</span>\r\n\r\n<span style=\"font-weight: 400;\">75g digestive biscuits</span>\r\n\r\n<span style=\"font-weight: 400;\">100g desiccated coconut</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 2 oranges</span>\r\n\r\n<span style=\"font-weight: 400;\">1 Tbsp castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">150g butter, melted</span>\r\n\r\n<b>Cake</b>\r\n\r\n<span style=\"font-weight: 400;\">750g plain cream cheese, softened</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 2 oranges</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 1 large lemon</span>\r\n\r\n<span style=\"font-weight: 400;\">1 cup castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">3 eggs</span>\r\n\r\n<span style=\"font-weight: 400;\">¼ cup lemon juice</span>\r\n\r\n<span style=\"font-weight: 400;\">¾ cup (180g) sour cream</span>\r\n\r\n<b>Sour-cream topping</b>\r\n\r\n<span style=\"font-weight: 400;\">1 cup (240g) sour cream</span>\r\n\r\n<span style=\"font-weight: 400;\">2 Tbsp castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">2 tsp lemon juice</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated orange zest or orange wedges for garnishing</span>\r\n<ol>\r\n \t<li>Use a pestle and mortar or a food processor to crush the Brazil nuts (I like them a little crunchy). Use a rolling pin to crush the digestive biscuits, and add these to the nuts, along with the coconut, orange zest and castor sugar. Add the melted butter and mix well.</li>\r\n \t<li>Grease a 24cm springform cake tin. Press the crust mixture lightly on to the base and sides of the tin. You want a thin crust on the base (5–7 mm) and it doesn’t matter if the crust doesn’t go all the way up the sides of the tin or is uneven in height. Put in the fridge for half an hour.</li>\r\n \t<li>Preheat your oven to 180ºC.</li>\r\n \t<li>To make the cake, blend the cream cheese, orange zest, lemon zest and castor sugar in a large bowl, then add the eggs, one at a time, blending well after each addition. Add the lemon juice and sour cream.</li>\r\n \t<li>Pour the mixture into the cooled crust. Bake for 1 hour and 15 minutes, then remove from the oven and cool for 15 minutes.</li>\r\n \t<li>Make the sour-cream topping by mixing the sour cream, castor sugar and lemon juice in a bowl. Spread over the cheesecake and bake for a further 20 minutes or until set.</li>\r\n \t<li>Leave the cheesecake to cool in the oven, with the door ajar. Then refrigerate for at least 3 hours. Garnish with finely grated orange zest or orange wedges.</li>\r\n</ol>\r\n<b>Note</b>\r\n\r\n<span style=\"font-weight: 400;\">This recipe has flavours of the Karoo and New York. Ag, shame.</span>\r\n\r\n<span style=\"font-weight: 400;\">serves 10–12</span>\r\n\r\n<b>Crust</b>\r\n\r\n<span style=\"font-weight: 400;\">200g Brazil nuts</span>\r\n\r\n<span style=\"font-weight: 400;\">75g digestive biscuits</span>\r\n\r\n<span style=\"font-weight: 400;\">100g desiccated coconut</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 2 oranges</span>\r\n\r\n<span style=\"font-weight: 400;\">1 Tbsp castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">150g butter, melted</span>\r\n\r\n<b>Cake</b>\r\n\r\n<span style=\"font-weight: 400;\">750g plain cream cheese, softened</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 2 oranges</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated zest of 1 large lemon</span>\r\n\r\n<span style=\"font-weight: 400;\">1 cup castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">3 eggs</span>\r\n\r\n<span style=\"font-weight: 400;\">¼ cup lemon juice</span>\r\n\r\n<span style=\"font-weight: 400;\">¾ cup (180g) sour cream</span>\r\n\r\n<b>Sour-cream topping</b>\r\n\r\n<span style=\"font-weight: 400;\">1 cup (240g) sour cream</span>\r\n\r\n<span style=\"font-weight: 400;\">2 Tbsp castor sugar</span>\r\n\r\n<span style=\"font-weight: 400;\">2 tsp lemon juice</span>\r\n\r\n<span style=\"font-weight: 400;\">finely grated orange zest or orange wedges for garnishing</span>\r\n<ol>\r\n \t<li>Use a pestle and mortar or a food processor to crush the Brazil nuts (I like them a little crunchy). Use a rolling pin to crush the digestive biscuits, and add these to the nuts, along with the coconut, orange zest and castor sugar. Add the melted butter and mix well.</li>\r\n \t<li>Grease a 24cm springform cake tin. Press the crust mixture lightly on to the base and sides of the tin. You want a thin crust on the base (5–7 mm) and it doesn’t matter if the crust doesn’t go all the way up the sides of the tin or is uneven in height. Put in the fridge for half an hour.</li>\r\n \t<li>Preheat your oven to 180ºC.</li>\r\n \t<li>To make the cake, blend the cream cheese, orange zest, lemon zest and castor sugar in a large bowl, then add the eggs, one at a time, blending well after each addition. Add the lemon juice and sour cream.</li>\r\n \t<li>Pour the mixture into the cooled crust. Bake for 1 hour and 15 minutes, then remove from the oven and cool for 15 minutes.</li>\r\n \t<li>Make the sour-cream topping by mixing the sour cream, castor sugar and lemon juice in a bowl. Spread over the cheesecake and bake for a further 20 minutes or until set.</li>\r\n \t<li>Leave the cheesecake to cool in the oven, with the door ajar. Then refrigerate for at least 3 hours. Garnish with finely grated orange zest or orange wedges.</li>\r\n</ol>\r\n<b>Note</b>\r\n\r\n<span style=\"font-weight: 400;\">This recipe has flavours of the Karoo and New York.
